The restaurant takes pride in its authentic approach to ramen, with six signature broths slowly simmered for more than twenty hours, balancing flavors from whole pork bones, chicken, and vegetables with traditional Japanese ingredients like bonito, dashi, miso, and kombu. Adding to its unique appeal, the Charleston location will feature a full bar including three different Japanese beers on tap - something owner William Chen notes isn't currently available elsewhere in the city.
